A lifelong learner in nutrition, Val has witnessed the evolution of the field firsthand—beginning with collegiate study and certifications in the early 1990s, and later through specialized training that earned him certificates from Ivy League institutions, including Harvard Medical’s Designing a Sustainable Nutrition Plan and Cornell’s Medicinal Plants program. Val is also a certified Life Coach, known for helping clients turn intentions into passions, and passions into sustainable habits. This expertise in behavior change became central to his 14 years with the American Council on Exercise, where he served as a Subject Matter Expert, and contributed to his appointment as Corporate Director of Health for one of Michigan’s most prominent communities.
